The Mac Mini M1 only supports one USB-C/Thunderbolt display and one HDMI display, for a total of 2. Unfortunately, it is not possible to display a third display with this adapter.

I have my MacBook Air M1 and MacBookPro M2 both successfully connected with 2 screens. I think 3 would also work, but since I don't have another one, I can't confirm it for you. However, I have connected both screens using the display port.
Yes it works perfectly. I bought it for this very purpose. Haven't found a comparatively cheaper alternative myself.
