I'm a little unsure right now: Is the cash back already deducted from the VP of 1999.00? Or will I receive a separate refund from Canon after the purchase?

You will only get the 275.- back from Canon after the purchase.

Here's how it works:
Promotion period: 1.9. - 31.10.2017
1) Buy the promotional product
2.) Register at canon.ch/mystorypack by 30.11.2017 + upload your receipt as a PDF file
3) Select CashBack
The CashBack will be transferred to your bank account within five weeks of registration.
